Meethe Chaawal | Sweet Rice | Rice Pudding

At home, we call this recipe as Meethe Chawal. In English, the simple translation would mean Sweet Rice, where Meethe is known as "Sweet" and Rice is called as "Chawal". Sweet rice is very easy to make and a perfect desert for small pooja, party and get together at home.

This yellowish colored rice recipe is a sweet and delectable one. They are very popular in Punjab. Deserts made with rice, cardamom and other delicious ingredients. This is one of the desert which is liked by every person and loved by kids also. This is also called "Zarda" and traditional Pakistani sweet dish, which is made in every occasion. It is easy to make and consists of simple ingredients.Learn how to make Meethe chaawal with very simple and easy steps.

Ingredients :

Basmati Rice - 2 cups [wash and soaked in water]
Yellow-Orange Food Color
Black Cardamom seeds (badi eliachi) - 2 nos / Cloves(laung) -5 nos
Small Cardamom (choti eliachi) - 8 tsp
Desi Ghee(clarified butter) - 5-6 tbsp
Raisins - 2 tbsp (wash and soaked in water)
Chopped 8-10 almonds
Sliced Dried Coconut
Sugar - 1-1/2 cup (adjust according to taste)
Water for sugar syrup - 1-1/2 cup
Water for rice - 2-1/2 cup

Preparation Method :

1. For Sugar Syrup - Mix 1-1/2 cup water and sugar in a pan. Add saffron/food color and bring to boil, stirring in between. Keep it aside.

2. Heat Desi ghee in a heavy bottom pan or kadai. Add cardamom, black cardamom seeds/cloves. Stir for few seconds. Now Add almonds, drained out raisins and dried coconut. 

3. Add drained rice and mix gently. Add 2-1/2 cup of water and boil it.

4. Reduce flame. Keep tawa under the pan of rice as soon as it starts to boil to reduce the heat further. Cook it till the water gets absorbed. 

5. Now add sugar syrup. Mix lightly sugar syrup with rice. Cover the lid and cook on low heat till rice is done and syrup is absorbed.

6. Garnish with nuts and Serve hot Meethe chaawal to your family members.
